An innovative product line, an ancient tradition

"Ella - Freschi di Bufala" (fresh buffalo cheeses) is the recorded brand which identifies a new range of high quality artisanal cheeses, specifically developed to meet the needs of an increasingly demanding and knowledgeable clientele, who expect high quality food products and are mindful of both origin and processing of the raw materials.

Only fresh buffalo milk, produced within the territory enclosed in the specific PDO (Protected Designation of Origin) "Mozzarella di Bufala Campana" area, some rennet and a pinch of salt. Nothing more: no preservatives, milk ferments or any other natural or artificial additive.

Exactly as they used to do 100 years ago, when buffaloes were carefully raised and fed, and milked no more than once a day, in order to assure their wellness, which consequently resulted in a better milk quality.

Small scale processing and accurately traced cheeses, made by the wise and caring cheesemaker's hands, who are able to "feel" day by day how the spun paste is affected by the weather and the features of the milk processed. A very special expertise that no industrial equipment will ever be able to replace.

A wide range of cheese products, wrapped in very handy and eco-friendly packages, which display not only the product expiration date (rather shorter than any similar product) but also the manufacturing day, in order to always ensure maximum freshness to the cheese when it is consumed.

The final results are the traditional and unique tastes of these cheeses, which give their best performances when eaten as they are, so that they can express the fresh, typical laminated texture of mozzarella, the creamy and light nature of ricotta, the softness and musky/yogurt senses offered by the white-rind aged cheese. They can however act as well as very precious ingredients when used to prepare more or less elaborated dishes, where the special buffalo milk flavors and the craftsmanship used during the milk processing succeed in highlighting the chef's work and in giving a particular smoothness to the course.

We are proud to reintroduce to the gourmands the ancient artisanal traditions, paying attention to be as convenient and eco friendly as possible, because today the consumers' needs have tremendously grown up.

The Company

It was 1969 when Benito La Vecchia started learning the complex art of making cheese from buffalo milk. Just five years later, he began to transfer his skills to his son Domenico, when he was only sixteen.

In the late 70's Benito became the owner of the company where he worked as a cheesemaker (i.e. curatino, as it is called here) and in 1984 he decided to move it to Alvignano, a village in the countryside around Caiazzo. This is an area of outstanding natural beauty, especially renowned for its wine and olive productions, halfway between the Matese Park and the Taburno-Camposauro Park, that is an ideal habitat for the buffalo breeding.
